Simple but good way to use different species.
3 to 6 species (usually two fillets of each)
4-6 slices bacon
salt and pepper or any of your favorite spices
Take the skinless, boneless fillets and slice them thin (usually 1/8th inch) and keep separate. Start building a single fillet out of all the slices, alternating and layering the meat to make the fillet roughly six inches wide. Once complete sprinkle with spices and place bacon strips length wise. Put the lemon slices on top and bake at 375 degrees F. until bacon has cooked down. Serve with your choice of steamed veggies and enjoy.
I haven't tried this one yet, but anything with bacon is a winner in my book !!!
